I went with three of my favorite summer fruits – watermelon, cantaloupe and honeydew melon. I lucked out and picked out three that were perfectly ripe and sweet, perfect for granitas. Cut ’em up, added a little light agave syrup, tossed them in the Blendtec, then classed them all up by pouring them in styrofoam cups. What’s more summery then fruit and styrofoam anyway, right? Brings me back to childhood.
The boys loved them, especially Cole. He came home from his Little League game tonight and ate a watermelon one, patiently scraping it bite by bite until the cup was clean. At that point, I gave myself a pat on the back for keeping him relaxed and busy for 30 minutes as he scraped and scraped, without one complaint. I must have done something right!
I made about 8 of these bad boys, and if for some reason a couple don’t get eaten by the end of the weekend, I will gladly use them in a breakfast smoothie next week. Hoping that’s the case actually.
Granita Recipe
	
	
	
Ingredients
- 1 lb. 13 oz. watermelon, cut into wedges, (about half of a regular size seedless watermelon)
 - 2 tablespoons agave syrup
 - 1 lb. cantaloupe, cut into wedges, (about half of a regular size cantaloupe)
 - 1 tablespoons agave syrup
 - 1 lb. honeydew, cut into wedges, (about half of a regular honeydew)
 - 2 tablespoons agave syrup
 
Instructions
- To make watermelon granita: Place wedges and agave into into a blender or food processor and pulse until liquified. Pour into selected vessel and freeze until solid, about 2 to 4 hours.
 - To make cantaloupe granita: Place wedges and agave into into a blender or food processor and pulse until liquefied. Pour into selected vessel and freeze until solid, about 2 to 4 hours.
 - To make honeydew granita: Place wedges and agave into into a blender or food processor and pulse until liquefied. Pour into selected vessel and freeze until solid, about 2 to 4 hours.
 - **Notes** (1) If you don't have agave syrup, a simple syrup will work just as well. Simple syrup can be made by using equal parts sugar and water and heating it to boil and then cooling it prior to use. For these three flavors make one batch by using 1/2 cup water and 1/2 cup sugar. (2) Be sure to taste as you go, depending on the sweetness of the fruit you can increase or decrease the agave syrup to suit your preference.
